🐮Cheese: Smoked Cheese Wedge Organic 150g (Ashdown Forester's)
Brand: High Weald Dairy
---
Oak Smoked Ashdown Forester’s is a young, firm, un-pressed cheese that has been naturally smoked over oak shavings. It has an attractive shape with a basket weave texture on the natural edible rind and has been aged for around three months prior to being smoked. The cheese has a creamy, slightly squidgy texture and the combination of the matured alpine-style cheese with the oak-y smokiness from the traditional smoking results in a very pleasant but not overpowering profile. This cheese pairs particularly well with gherkins, charcuterie, stewed apple and onion chutney.
CHEESE FACT: Ashdown Forester’s is cold smoked with oak shavings for around eight hours.
